5 high-protein Indian vegetarian recipes under 30 minutes

The most common gap in an Indian vegetarian diet is protein — not calories, not vitamins. These recipes close that gap without much effort.
Sprouts and paneer chaat: toss boiled moong sprouts with cubed paneer, onion, tomato, lemon and chaat masala. Roughly 20g of protein per bowl.
Moong dal cheela: soak and grind yellow moong dal, add ginger and green chilli, cook like a pancake. Serve with mint chutney and curd.
Rajma tikki: mash boiled rajma with oats and spices, shallow fry. Fibre and protein together keep you full for hours.
Palak paneer with a twist: use less cream and add a spoon of roasted besan to keep the gravy thick without the fat.
Curd bowl with roasted chana and seeds: a five-minute evening option when cooking is not going to happen.
Batch-prepare sprouts and boiled rajma once a week and these become weeknight-fast.
